Ici, le plaisir est au programme ! La bonne cuisine est simple et pourtant raffinée. Elle se caractérise par des ingrédients frais, le plaisir d'expérimenter et l'amour du détail.
Et par le mélange de différents styles. C'est la seule façon de créer de nouvelles expériences gustatives. La cuisine moderne du Tyrol du Sud répond en tout cas à tous ces principes. Elle repose sur un mélange de cuisine tyrolienne originale et surtout authentique et d'art culinaire méditerranéen, dont elle a hérité l'amour des herbes fraîches, des huiles nobles et des préparations délicates.
Dans la cuisine tyrolienne traditionnelle, on ne se soucie parfois pas beaucoup de la préparation particulière des quenelles ou des différentes nuances de goût du goulasch. Jusqu'à aujourd'hui, la cuisine du Tyrol du Sud s'est toutefois émancipée de la "Haudrauf-Küche" rustique et se présente désormais de manière beaucoup plus fraîche, légère et consciente.
Cela ne signifie pas pour autant que l'on jette aux orties les anciennes traditions culinaires et recettes. Les Schlutzkrapfen existent aujourd'hui comme il y a 100 ans, à la différence qu'ils sont désormais garnis de délicieux parmesan italien. Les asperges du Tyrol du Sud fraîchement piquées sont toujours servies avec une sauce Bolzano, mais aussi parfois avec de la roquette ou des herbes méditerranéennes. On n'hésite pas non plus à servir un carpaccio italien d'agneau de lait du Tyrol du Sud avec des herbes sauvages et des bleuets.

Dans le Tyrol du Sud, on veille toujours à la qualité, à la fraîcheur et à l 'origine des ingrédients, le lard, les pommes de terre et les œufs ne proviennent généralement pas du commerce de gros, mais de paysans amis. Le vin provient des caves locales et l'art culinaire est copié par des cuisiniers qualifiés et soucieux du détail.
De fait, les restaurants gastronomiques du Tyrol du Sud sont chaque année récompensés par des prix, des toques et des étoiles. Ceux qui souhaitent bien manger, mais qui n'ont pas les nerfs assez solides ou qui n'ont pas pu obtenir de table pour une cuisine gastronomique hors du commun, peuvent se contenter des nombreuses bonnes auberges. La cuisine y est traditionnelle, l'ambiance agréable, le service bon et aimable et la carte des vins généralement plus que respectable. Il en va de même pour les nombreuses fermes et les débits de boissons. La plupart des plats proposés au menu proviennent de leur propre jardin ou de leur propre étable.
